Hummus with Meat

Serves 3-4

This is one of those deceptively simple dishes that delivers on flavour, protein, and satisfaction. Inspired by one of my favourite dishes at Tabule in Toronto, this dish has officially earned a spot in our regular rotation. Serve it as an appetizer or a main - it’s quick, hearty, and delicious.

Ingredients

  • Hummus (store-bought or homemade)
  • 1 lb ground lamb or beef
  • 2 tsp Lebanese 7-spice
  • 1 tsp salt
  • 2 - 3 tbsp toasted pine nuts
  • Olive oil (for drizzling)
  • Parsley or mint (optional)
  • Pita, laffa, or your favourite flatbread (gluten-free, if needed)

Directions

  1. In a large skillet over medium heat, brown the ground lamb or beef until fully cooked. Drain excess fat, then return the meat to the pan.
  2. Add the Lebanese 7-spice and salt to the pan. Stir well to combine and let cook for another 1–2 minutes to allow the spices to bloom.
  3. Spread a generous, even layer of hummus onto a large plate or shallow bowl.
  4. Spoon the warm spiced meat mixture evenly over the hummus.
  5. Sprinkle with toasted pine nuts, herbs (optional) and, if desired, finish with a drizzle of olive oil.
  6. Tear pieces of flatbread and scoop up the hummus and meat together.

Notes

  • I use high-quality store-bought hummus for convenience (no shame in that!).
  • For a flavour twist, try drizzling a bit of hot honey instead of olive oil - the sweet heat adds an unexpected (and delicious) kick.
  • If you’re gluten-free: I use laffa bread from Gold Standard Bakery - it’s gluten-free, chewy, and genuinely delicious. If you're local or within delivery range, it’s worth tracking down.
